Ingredients
base layer
- 6 medjool dates
- 2 tablespoons spouted buckwheat
- 2 1/2 tablespoons shredded coconut
nice cream layer
- 4 frozen bananas
- one vanilla pod
- 1 teaspoon ground cinnamon
Instructions
Base Layer
- Soak the dates for 25 minutes in water.
- Combine the dates, coconut and buckwheat in a high-powered blender or food processor and blend together.
- Press mixture into a 4 x 6 inch pan.
- Refrigerate while making the cream layer.
Cream Layer
- Blend bananas and cinnamon.
- Cut down the middle of the vanilla pod, scrape out the vanilla, and add to the blender
- Combine all ingredients until smooth.
Assemble
- Take the container with the base out of the fridge.
- Add the cream layer on top of the base and flatten it out so it is evenly spread out.
- Place in the freezer for four hours
- Cut into squares
- Eat!
