We love this easy and creative recipe for Turmeric Roasted Acorn Squash Seeds. Acorn seeds are so fun to roast and amazingly healthy. Add the turmeric and you just created an anti-inflammatory powerhouse.
We were inspired to create this recipe after bakingĀ a stuffed acorn squash. No reason to waste those amazing seeds!
Turmeric Roasted Acorn Squash Seeds
Ingredients
- 1 acorn squash - seeds removed; rinsed and dried
- 1 tablespoon coconut oil
- 1 teaspoon turmeric
- 1 teaspoon sea salt
Instructions
- Lightly coat the acorn squash seeds with coconut oil.
- Sprinkle with turmeric and sea salt.
- Roast at 300 degrees for approximately 15 minutes until the seeds begin to pop.
