Ingredients
Twice Baked Sweet Potato
- 2 organic sweet potatoes
- 2 tablespoons organic butter or ghee melted, plus an additional table-spoon for brushing the skins
- 1/4 cup of your favorite nut milk
- sea salt and pepper to taste
Creamy Avocado Dressing
- 2 avocados, halved, pitted and scooped from skin
- juice from half of a lime
- 1 large clove of garlic, grated
- 1 tablespoon onion powder
- 1 teaspoon cumin
- 1 tablespoon apple cider vinegar
- 1 1/2 tablespoons raw honey
- 2 tablespoons fresh dill, chopped fine
- 1/2 cup of organic olive oil, you may need to add a little more if dressing is too thick.
- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper
Instructions
Twice Baked Sweet Potato
- Preheat oven to 375 degrees
- Wash sweet potatoes, dry and poke several hole in skin with fork
- Place sweet potatoes in oven and bake until just soft to the touch. Approximately 15 to 20 minutes depending on size
- Set aside until cool enough to handle
- Once cool, cut sweet potatoes in half lengthwise
- Gently scoop the flesh from the center of each half into a medium sized bowl, leaving an 1/8 of an inch of the flesh on the skin.
- Place potato skins on a sheet pan. Brush melted butter/ghee on flesh.
- Bake for an additional 7 minutes
- While skins are in oven, add the 2 tablespoons butter/ghee, almond milk, salt and pepper into the bowl with the sweet potato flesh.
- With a hand blender, mix until well mashed and slightly fluffy.
- Remove skins from oven.
- Divide mashed sweet potato into four equal por-tions and stuff skins. Brush with remaining butter/ghee.
- Return to the oven for a final 15 minutes to bake.
Creamy Avocado Dressing
- Place all ingredients, except oil, into a blender.
- Pulse until ingredients start to come together and form a paste.
- Scrape sides of blender with a spatula.
- Turn blender on low, slowly drizzle oil into the paste. You will see the dressing become creamy.
- Once all the oil is add to the dressing, turn off the blender, taste to see if you would like to add any more salt, pepper or honey.
- Cover, blend on high for one minute. This will add air and make if extra creamy.
- Remove sweet potatoes from oven and add a dollop of dressing on top.
