Southwest Tepary Bean Soup
Ingredients
- 2 cups white Tepary beans (substitute Navy Beans if Tepary aren't available)
- 1 red onion finely chopped
- 2 shallots peeled and minced
- 2 garlic cloves peeled and minced
- 1 ancho chili dried
- 1 guajillo pepper
- 6 cups vegetable stock
Instructions
- Soak beans overnight.
- Saute the remaining ingredients in a medium sized pot for 5 min or until softened.
- Add the beans to the pot.
- Add enough veg stock to fully cover the beans.
- Let the soup simmer for 40-50 minutes.
- Chef blended the soup as a base for kale. You can choose to serve without blending for a hearty family dinner.
