Ingredients
- 3 garlic cloves, minced
- 1 jalapeño, seeded and deveined, finely chopped
- 1 jicama, chopped into ½ inch pieces
- 1 small red onion, finely chopped
- ½ cup chopped fresh parsley
- ½ cup chopped fresh cilantro
- 1 cup halved cherry tomatoes
- Juice of 1 lime
- ¼ cup red wine vinegar
- ½ cup olive oil
Instructions
- Combine garlic, jalapeno, jicama, onion, parsley, cilantro and tomatoes in a medium bowl.
- Combine lime juice, vinegar and olive oil in small bowl; add to jicama mixture.
- Serve over savory almond cakes. Refrigerate leftovers.
