Try these raw vanilla energy chunks that are very healthy

Ingredients
- 1/4 cup raw cashews (soaked overnight)
- 1/4 cup unsweetened shredded coconut
- 1/4 cup dried fruit (such as raisins, dates, figs, apricots, or mulberries.)
- 2-3 tablespoons coconut flour
- 1 tablespoon liquid sweetener (I recommend raw honey, pure maple syrup, or coconut nectar)
- 1 teaspoon vanilla extract
Instructions
- Add your dried fruit of choice to a food processor and pulse until a paste forms. This may require up to a tablespoon of water added while pulsing.
- Add all other ingredients except for the coconut flour and continue pulsing until well combined.
- Slowly add in coconut flour while pulsing mixture until it starts to form a crumbly dough. You may not need the full 3 tablespoons of flour depending on your choice of sweetener and consistency of your dried fruit paste.
- Remove dough form food processor and roll out on parchment paper or another non-stick surface. The dough should be a sheet about 1-2 inches thick. Cut into squares, or "chunks", and store in the refrigerator for up to a week.
