Raw Fruit Cobbler
Ingredients
CRUST
- 1 1/2 cups pecans
- 1 1/2 cups hazelnuts
- 10 medjool dates (pitted)
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 3/4 teaspoon celtic sea salt
SAUCE
- 5 medjool dates pitted
- 1/8 cup coconut nectar
- 3 tablespoons coconut oil
- 1/2 teaspoon vanilla
- 1/2 to 2/3 cup water (as needed)
- 1/2 TO 2/3 CUP WATER (AS NEEDED)
FILLING
- 4-6 cups of your favorite fruit (We love mango, strawberries, blueberries, or peaches).
Instructions
Crust
- Blend nuts, vanilla, cinnamon, and salt into a powder.
- Add dates and blend until the mixture just begins to stick together.
- Divide nut mixture, reserving half.
- Press into the bottom of a 9 x 9 pan. (Use a larger pan for a thinner crust).
Sauce
- Blend together the ingredients for the sauce until smooth.
- Stir the fruit into the sauce.
Assemble
- Add the fruit on top of the pressed crust.
- Sprinkle with remaining nut mixture.
- Refrigerate between yummy bites.
