These amazing raw fig ginger truffles are

Ingredients
- 2 tablespoons raw cacao powder (plus extra for dusting)
- 1 cup dried figs (any variety will do, but make sure the are unsulphured with no added preservatives or sugar)
- 1 teaspoon fresh ginger (grated)
- 1 tablespoon raw honey or coconut sugar
Instructions
- Soak figs for at least one hour or until softened.
- Combine figs, 1 tablespoon cacao powder, ginger, and coconut sugar in a food processor until a paste forms.
- Form the mixture into balls and roll in the additional cacao powder.
- Store in the refrigerator or freezer.
