Notes
* We adore macadamia, pistachios, raw cashews, or raw almonds for this recipe
** Our favorite dessert spices are cinnamon, cardamom, nutmeg, allspice, and ginger. Or try a little cocoa. Experiment! It is fun!
*** You can't go wrong with orange, lemon, or lime. Imagine pistachio and lime or cardamom and orange. YUM!
**** Now for the bonus! If your heart desires, include goji berries, dried cherries, or currants. The sky is the limit!
Ingredients
- ¾ cup almond meal
- 1 ½ cups shredded coconut (preserving ¼)
- ⅓ cup coconut flour
- ½ tsp sea salt
- 1 tablespoon vanilla
- ⅓ cup coconut oil
- ½ cup raw honey
- 1 cup of your favorite ground nuts*
- 1 tsp of your favorite spice**
- ¼ cup fresh citrus***
- Zest &rom the citrus (approx. 1 Tbls)
- ¼ cup dried fruit of your choice ****
Instructions
- Combine the almond meal, coconut flour, shredded coconut, and salt.
- Incorporate the coconut oil and honey into the dry ingredients, continually stirring (I use a food processor or mixer).
- Now for the fun part! Add your favorite nuts, spice, and citrus. Check out our tips below!
- Mix in the dried fruit of your choice.
- Shape the mixture into small balls.
- Roll into shredded coconut.
- Refrigerate for at least one hour before serving. Store in fridge between yummy bites.
- Makes approximately 24 cookies.
