These paleo sweet potato collard wraps were inspired by my 94 year old beau, Harry.
We have created an easy dipping sauce with cranberries!
Prepare the wraps ahead of time and take to work for a great lunch or a quick healthy family dinner.

Notes
* You will find differing opinions on how best to prep the collard to make folding easy. I find that the easiest approach is just to use a room temperature leaf. Some people find that a quick boil and an ice water bath works if you have a particularly stubborn collard.
Ingredients
- 4 large collard leaves
- 2 medium sweet potatoes baked
- 3-4 slices Crispy bacon (We chose organic from a happy pig).
- Cranberry sauce
Instructions
- Remove stem from collard leaf (this is the excess not attached to a leaf).
- If the leaf is large cut along stem for two medium sized leaves. If you have a smaller green, you will need to shave the stem until flat.*
- Place two leaves together, overlapping by half.
- Alternate sweet potato, bacon, and cranberry sauce on leaf.
- Wrap as you would a tortilla.
- These are great served with a warm or cold filling.
