*If you have empty cups in the muffin tins, fill ¼ with water.
Ingredients
Paleo Peach Ginger Flax Muffins
- ½ stick butter
- ¼ cup raw honey
- 2 eggs
- 1 teaspoon vanilla
- ¼ cup coconut milk
- 1 ½ cups ground golden flaxseed
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon ground ginger
- ½ cup diced fresh peaches
Pecan Topping
- 3 tablespoons butter
- ½ cup pecan pieces
- ¼ cup coconut sugar
- 1 teaspoon cinnamon
Instructions
Paleo Peach Ginger Flax Muffins
- Preheat oven to 375 degrees.
- Combine butter, eggs, honey, vanilla, and coconut milk.
- Add dry ingredients. Mix until smooth.
- Gently stir in fresh peaches.
- Spoon batter into greased muffin tin (or muffin cups). Best at ¾ full.
- Top with pecans - recipe below. Makes 6-8 muffins*.
- Bake for 14-17 minutes until the top is no longer shiny and baked through.
Pecan Topping
- Gently melt butter. Stir in pecans, sugar, and spice blend.
- Top muffins and bake.
