Ingredients
Paleo Pancakes
- 1/2 cup coconut flour
- 3 eggs
- 1/2 cup of coconut or your favorite nut milk
- 1 teaspoon fresh squeezed lemon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- sea salt
- 1/3 cup allergen free chocolate chunks (optional)
Strawberry Rhubarb Compote
- 3/4 cup diced rhubarb
- 1/2 cup fresh strawberries
- 1/2 teaspoon finely grated ginger
- 1 teaspoon raw honey
Instructions
Pancakes
- Blend ingredients until smooth
- Spoon onto hot griddle.
- Flip when bubbles begin to break.
Rhubarb Compote
- Combine ingredients in a sauce pan.
- Simmer until thick and saucy.
- Serve over pancakes.
