Notes
* Add more ginger as desired. Increasing the amount will provide more of the ginger spice flavors. I happen to love ginger, so I have been known to use a cup in this recipe.
** For a dairy free option, replace the butter with coconut oil.
*** Vegetarian? Use mushroom or veggie stock in place of the chicken broth.
Ingredients
- 1 lbs asparagus (large bunch), trimmed
- 1 small yellow onion, chopped
- ½ cup diced peeled ginger*
- 2 tablespoons butter**
- 5 cups organic chicken broth***
- ½ teaspoon salt
- ½ cup coconut milk
- ¼ cup pomegranate seeds
Instructions
- Place the butter, onion, and ginger in a large saucepan. Cook over medium heat until the onions are soft. Add the salt.
- Add the trimmed asparagus and chicken broth. Cook on medium to medium high until the asparagus is tender. Approximately 10-15 minutes.
- Using a VitaMix or blender, carefully blend one cup at a time. It is important to take your time in this process. If you overfill the blender, the hot soup may explode out the top.
- Once the soup is blended, you may refrigerate or serve immediately.
- When serving, ladle the soup into your favorite bowls, add 5-6 pomegranate seeds and a drizzle of coconut milk. Sprinkle with salt.
