Paleo Chocolate Sandwich Cookies
Inspired by Meg Phillips‘ search for a replacement to the unhealthy commercial cookie, our chocolate sandwich cookie sensations are full of amazing wellness ingredients and taste like nirvana. Oh and because Meg is from Australia she calls these biscuits! Enjoy.
Paleo Chocolate Sandwich Cookie
Ingredients
Cookie
- 1/3 cup coconut oil
- 2/3 cup peanut butter (almond butter and cashew butter also work great!)
- 2/3 cup raw honey
- 1 teaspoon vanilla
- 1/2 cup cacao powder
- 1/4 cup raw cacao nibs
- 1 tsp baking powder
- 1 1/2 cups almond meal
Filling
- 10 dates pitted
- 3 tbsp cacao powder
- 1/4 cup of coconut cream (may need more depending on consistency)
Coating:
- 2/3 cup organic unsweetened chocolate
- 4 tbsp coconut oil
- 1/4 cup raw honey
Instructions
- Preheat oven to 325 degrees Fahrenheit or 160 degrees Celsius.
Cookie
- Cream the oil, peanut butter and honey with a mixer until you have a buttery consistency. Add remaining ingredients.
- Refrigerate dough for an hour.
- Create 1 inch disks by rolling into a ball and gently pressing. If you are feeling fancy, the dough can be rolled out and cut into shapes of your choice.
- Bake for approximately 8 minutes until set and no longer shiny on top.
- Allow to cool and place in refrigerator for a minimum of thirty minutes before assembling.
Filling
- Soak pitted dates overnight or for a faster method heat in a sauce pan with warm water for approximately thirty minutes until soft.
- Combine ingredients in a food processor until thick and creamy.
Coating
- Gently melt the ingredients in a double boiler. This step can also be done in the microwave. Be sure to stir every 30 seconds until is melted.
Assemble
- Spread filling between two cookies.
- Dip into chocolate
- Repeat!
- Store in refrigerator between serving.
