They are a great option for your leftover rice. The walnuts add just the right amount of protein!

Ingredients
- ¾ cup of cooked rice
- 1 cup walnuts coarsely ground
- ¾ cup grated Parmesan cheese
- 1 egg
- 2 tablespoons fresh lemon juice
- 1 leek finely chopped
- ½ cup celery finely chopped
- 2 cloves garlic minced
- 1 teaspoon herbs de provence
- sea salt
- coarse ground black pepper
Instructions
- Gently sauté leeks, celery, and garlic until softened.
- Combine remaining ingredients. Add vegetables
- Stir until thoroughly combined.
- Form into meatball size spheres. (Note: If the mixture is not wet enough add another egg)
- Bake at 350 degrees for approximately 30 minutes. The exterior will be browned and crisp with a soft interior.
- Serve with your favorite marinara.

Fantastic article! I have known Marissa since she was a baby, but had not seen her for 15 years.
