Gluten Free Sweet Berry Corncake
This gluten free sweet berry corncake recipe is
Gluten Free | Dairy Free | Non-GMO | Soy Free | Organic | Sweetened with Raw Honey
Ingredients
- 2 cups cornmeal (non-GMO please)
- 1 cup almond flour
- 3 eggs
- ½ cup raw honey
- ½ cup maple syrup
- ⅓ cup coconut oil, gently melted
- 1 teaspoon vanilla
- 1 teaspoon ginger
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon sea salt
Berry Topping
- 1 cup sliced organic strawberries
- ½ cup blueberries
- ⅓ cup raw honey
- Zest from an orange
Instructions
- Preheat oven to 350 degrees.
- In mixer blend together cornmeal, almond flour, and eggs. Add honey and maple syrup.
- Slowly add coconut oil while blending.
- Add remaining ingredients. Beat until smooth.
- Pour into a 9 inch greased tart pan. Bake 45-50 minutes.
- Cool, remove from tart pan, and top with berries.
Berry Topping
- Combine berries with honey and orange zest. Top the cake with the berries.
