This Gluten Free Spaghetti Squash Parmesan recipe is

Ingredients
- 1 whole spaghetti squash
- 4 pieces bacon
- 2 eggs beaten
- 2 Tablespoons parmesan cheese
- 1 cup rainbow chard – remove large stem and cut into thin strips.
Instructions
- Cut the spaghetti squash in half lengthwise. Remove the seeds.
- Place in a baking dish with an inch of water, cut side up.
- Bake 45 minutes at 375 degrees until done. (You will know because a fork will remove the squash in strands that look like spaghetti).
- Meanwhile cook the bacon and reserve two tablespoons of the bacon drippings.
- Dice bacon into bite size pieces. Return to skillet.
- Add the spaghetti squash strands to the bacon, along with the eggs and parmesan cheese.
- Cook on medium high until the eggs are cooked. If the squash was hot this will only take a couple minutes.
- Add rainbow chard and serve!
