At LoveSelf, we don’t like processed sugar and always use real food. Gluten free no bake chocolate oatmeal cookies recipe will remind you of your childhood with the added bonus of healthy ingredients. So yummy your own kids will never know the difference.
Makes 2 ½ dozen

Ingredients
- 1 stick butter
- ½ cup peanut butter
- ½ almond milk
- 1 ¾ cups coconut sugar
- ¼ cup cocoa
- 1 teaspoon vanilla
- ½ teaspoon sea salt
- 1 cup shredded coconut
- 3 cups gluten free oats
Instructions
- Melt butter, almond milk, and coconut sugar, and over low heat. Bring to a light simmer. Do not over heat. Coconut sugar burns easily.
- Remove from heat and add remaining ingredients.
- Drop by spoonful onto waxed paper.
- The cookies will set and be ready to serve in minutes.

I’m definatly going to make these because they are healthier than the other version. Seems like a lot of coconut sugar though. Could I use less? I’m watching my weight. Also just tonight I saw a chief substitute avacado for butter. Hmm

The coconut sugar has a much lower glycemic index. We recommend beginning with the recipe as is and reducing according to your desired sweetness levels. Avocados are fabulous for dessert. We wouldn’t recommend it for this recipe yet certainly check out our other recipes with avocado. So good!!!
