Ingredients
- 4 tablespoons buckwheat flour
- 2 tablespoons coconut flour
- 1/2 medium banana, mashed
- 2 egg whites
- 6 tablespoons almond milk (or other milk)
- 1/4 teaspoon vanilla
- 1/4 teaspoon aluminum-free baking powder
Instructions
- Mix together dry ingredients.
- In a separate bowl, whisk together egg white, almond milk, and vanilla.
- Add wet ingredients and mashed banana to dry ingredient and stir until just combined.
- Cook pancakes on a skillet over medium heat for 2-3 minutes on each side. The batter will begin to form small bubbles when the pancakes are ready to flip.
