Makes 9 - 12 gluten free breakfast bars.
Ingredients
- 3 large bananas ripe
- 2 cups gluten free rolled oats
- 1/2 tsp sea salt
- 1/4 cup pitted dates
- 1/4 cup chopped almonds
- 1/4 cup pistachios
- 1/2 tsp cardamom
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 1 Tbsp raw honey
- 1 Tbsp maple syrup
- 1/4 cup dark chocolate chips
- 1/4 cup dried apricots
- 1/4 cup pumpkin seeds
Instructions
- Blend bananas and dates together in a food processor. Add all spices, the honey, and maple syrup.
- Fold in the rolled oats, nuts, seeds, dried fruit and chocolate chips.
- Bake 30 min. at 350 degrees in a parchment lined 9x9 pan. Rotate half way through baking for best results.
- Store in the refrigerator for week long snacking!
