Notes
* Gluten free bread cubes may either be purchased or prepared. Or buy a gluten free bread of your choice. Choose your gluten free bread carefully. Skip anything that is not labeled non-GMO and soy free. Cut into cubes and place on a baking sheet. Bake in 300 degree oven for approximately 30 minutes, stirring a couple of times. Remove from oven, when browned and crisp. Let rest for at least 30 minutes before using.
** Chicken stock may be substituted for veggie or beef stock. The cubes should be moist and not soaked. A little more or less than 2 cups may be needed, depending on the texture of the bread cubes.
Ingredients
- 9 cups gluten free bread cubes*
- 1 lbs gluten free sausage
- 2 medium sized apples, cored and cubed (approximately 2 cups)
- 1 celery root, peeled and diced (approximately 1 cup)
- 1 medium yellow onion, diced (approximately 1 cup)
- ⅓ cup finely chopped fresh rosemary
- ⅓ cup finely chopped fresh sage
- ⅔ cup chopped parsley
- 3 garlic cloves, minced
- 1 teaspoon sea salt
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 eggs
- 2 cups chicken stock**
Instructions
- Brown sausage in skillet or sauté pan. Set aside.
- Add olive oil and butter to pan, followed by apples, celery root, onion, and garlic, until softened.
- Combine bread cubes, sausage, ingredients from the pan, sage, rosemary, sea salt, and parsley in a large bowl.
- Whisk together eggs and stock. Add to the bread mixture and combine until moist.
- Stuff your holiday turkey or bake at 350 degrees for 40-45 minutes. If baking separately, cover for the first 30 minutes. The last 10-15 minutes uncovered will result in a golden brown.
