Ingredients
- 6 ounces unsweetened organic chocolate
- 1/2 cup raw honey
- 1 cup pomegranate or raspberry fruit juice
- vanilla bean
Instructions
- Cut open the vanilla bean and scrape out the inside.
- Combine vanilla and fruit juice and heat until warm.
- Gently melt chocolate and honey together in a microwave safe bowl or with a double boiler. Note: If using the microwave check every 15 seconds.
- Add warm juice to melted chocolate and whisk vigorously until fluffy.
- Cool until soft and moldable. This process happens very quickly.
- Roll into balls and finish with cacao, crushed nuts or your favorite ganache.
