Gluten free, refined sugar free, dairy free, and paleo, the Fruit and Honey Chocolate Truffle is incredibly easy to make and your belly will sing with happiness.
Ingredients
- 6 ounces unsweetened organic chocolate
- 1/2 cup raw honey
- 1 cup pomegranate or raspberry juice
- 1 vanilla bean
Instructions
- Cut open the vanilla bean and scrape out the inside.
- Combine vanilla and fruit juice and heat on stove top until just warm.
- Gently melt chocolate and honey together in a microwave safe bowl or with a double boiler. Note: If using the microwave, check every fifteen seconds.
- Add warm juice to melted chocolate and whisk vigorously until fluffy.
- Cool until soft and moldable. This process happens quickly.
- Roll into balls and finish with cacao, crushed nuts, or your favorite ganache.
