Thyme Roasted Pork
Ingredients
- 1/2 cup sea salt
- 1/2 cup black pepper
- 1 cup coconut sugar
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 tablespoon paprika
- 1 tablespoon smoked paprika
- 1 teaspoon dried oregano
- 1 tablespoon mustard powder
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 5 oranges
- 2 bunches of thyme finely chopped (approximately 1/2 cup)
- Your favorite cut of pork. Chef Daniel chose a pork leg. Pork loin would also work well.
Instructions
- In a bowl combine all the ingredients except the oranges, pork, and thyme.
- Rub the cure on the pork and refrigerate overnight.
- Remove from refrigerator the next day. Rinse the cure off the pork and pat dry with a towel.
- Mix the minced thyme with salt and pepper to taste.
- Rub the thyme mixture over the pork.
- Cut three of the oranges into wedges and place on a sheet pan.
- Place a roasting rack over the oranges and place the pork leg on the rack.
- Roast at 350 degrees Fahrenheit until a thermometer reads 165 degrees.
- While the pork is roasting squeeze the juice from the remaining two oranges every 20 minutes.
